Coconut Ice



Because it is now school holidays, we have so much more time to do extra baking! Today we made coconut ice, which was a massive hit and you will love it if you are a fan of coconut. It contains: coconut, condensed milk, icing sugar, and vanilla essence. No wonder we are in love with this!! It went so quickly so we made a second batch! 

The only down side is it takes quite a while to set so if you are impatient to eat it, make double and eat the unset batch while you wait ‒ it’s just as good J This is the perfect after dinner treat, or morning or afternoon tea snack. 

Coconut Ice

Ingredients:

Cooking oil spray 
2 1/4 cups sifted pure icing sugar
1/4 teaspoon cream of tartar
395g condensed milk
1/2 teaspoon vanilla
3 3/4 cups desiccated coconut
2-3 drops pink food colouring 

Method:

1. Line a 20cm square cake pan with non-stick baking paper and spray with cooking oil.
2. Place icing sugar and cream of tartar in a large bowl. Add condensed milk and vanilla essence and mix until well combined.
4. If mixture is not fairly firm, add extra coconut.
3. Divide mixture in half and add pink food colouring to one portion. Knead the food colouring through until it is evenly coloured. Press the pink mixture over the base of the pan and smooth the surface with your hand. 
4. Cover with the remaining white portion and again, smooth with your hand. Coat with desired amount of coconut
5. Refrigerate the coconut ice for approximately 3 hours, or until firm.
6. Cut pieces and enjoy your scrumptious coconut ice!
